Zagat Restaurants: Lorenzo's Cooks Up Prime S.I. Calamari

One Staten Island restaurant has customers going crazy for their special calamari.

A chef from Lorenzo's on Bloomfield, Staten Island offers to NY1 the secret behind the house specialty, "Calamari Padella." Customers pile in on a daily basis to try the famous favorite fried cephalopod.

"I came here about three years ago when I started working here, and it was famous since then. I think since day one it's been there signature, most popular dish," says chef Peter Bereza.

Bereza says the sauce is really what makes this dish pop. Start by sauteing garlic, shallots and ginger, then add some white balsamic vinegar, vermouth, sweet soy sauce and a dash of chili sauce.

When the sauce is ready, throw in some fried calamari. This favorite can be served in a variety of ways.

"You can serve it as an appetizer, you can serve it as a meal. if you wanted to, you could throw in some pasta," says Bereza. "There's a lot of things you can do with it."

Bereza can also willing to do the work at the dining room inside Staten Island's Hilton Garden Inn.

The Zagat Guide says "everyone is treated like a top customer" at this "elegant" American eatery.

Customers add special "cabaret nights" are great for a night on the town.

"It's a great cabaret room. We have built one of the best cabaret rooms in New York City," says Hilton Garden Inn owner Richard Nicotra. "We've had everyone play here from Lucy Arnaz to the Callaway sisters. All of the best cabaret singers have been here."

Out of a possible 30, Lorenzo's receives 19 for food, 21 for decor and 20 for service. The guide says a meal costs about $50.
