In addition to what FishyGinger says it's literally not as simple as just bringing it up to date either. The 360 version is done by 4J with help from Mojang, and 4J started working on the 360 version well before many of the updates seen in the PC version. Also, the PC version is coded in Java, while the Xbox version is... well, I don't think they've said specifically but I'd assume sort of it's own engine that may use some of the base code, but isn't exactly the same so the PC stuff has to be 'converted' to the Xbox format, which includes stuff like taking into consideration the hardware limitations of the 360. In theory 4J could just hold back their updates and then do one big one, but we'd all be waiting literally ages for it - and then 4J have said they want to eventually divert away from the PC version to do specific 360 version updates. So they've decided it's better to do frequent, incremental updates than one massive one which could take an extraordinary amount of time, even taking into account the speed they've updated the game to the point they have so far.
