Gluten Free Dairy Free Nut Free Granola Bars

If you or your child has a food allergy or intolerance, chances are you have more than one.  Finding a recipe that works for more than one allergy can sometimes be tricky.  But you can rest easy with this great recipe that is not only gluten and diary free, but also free of nuts, eggs and (if you use soy free chocolate chips) can be soy free too, not a common combination for a granola bar.  You can add any type of dried fruit you enjoy to change the flavor of these Gluten Free Dairy Free Nut Free Granola Bars, so bake up a big batch today and enjoy!

Gluten Free Dairy Free Nut Free Granola Bars

Ingredients:

  • 3/4 cup sunflower seed butter
  • 1/2 cup coconut sugar, sucanat or brown sugar
  • 1 1/2 cups banana, peeled and mashed
  • 1/3 cups coconut oil, melted
  • 1 tablespoon gluten free vanilla extract
  • 1/2 teaspoon salt
  • 2 1/2 cup certified gluten free oats
  • 1/2 cup roasted and salted pumpkin seeds
  • 1 cup dried fruit of choice (i.e.: raisins or combo)
  • 1/2 cup gluten & dairy free chocolate chips

Directions:

Preheat oven to 350 degrees. Grease 8×8 foil pan. In a large mixing bowl, whisk sunflower seed butter, sugar, mashed banana, melted coconut oil, vanilla and salt until well mixed. Stir in the remaining ingredients until combined. Press the mixture firmly and evenly into the prepared pan. Bake for 30 – 35 minutes or until golden brown and baked through. Let cool completely before cutting into squares.

Freezing Directions:

Place bars into the indicated number of freezer bags. Remove as much air as possible, seal, label and freeze.
