Elk Meatballs with Bourbon Barbecue Sauce Recipe
Elk meat has a rich, slightly sweet flavor that is milder than other venison like caribou, deer, or moose. To make this retro-inspired appetizer of elk meatballs, simply season the ground meat with sautéed onions, garlic, and a little allspice; add some ground pork for extra juiciness; form it into meatballs; and broil in the oven on a baking sheet. Then place the meatballs in a pot of homemade bourbon-barbecue sauce and keep them warm on the stovetop or in a slow cooker for an easy party appetizer. Or try stuffing them into a sandwich roll, topping them with cheese, and toasting the whole thing for a few minutes under the broiler for a meatball sub.

Wild Boar Carnitas Tacos with Jicama-Mango Salsa Recipe
Just like traditional carnitas, wild boar carnitas is simply shoulder meat braised in a flavorful liquid until tender enough to shred. Once the cooking liquid reduces, the meat is fried in its own fat until crispy on the outside but still tender on the inside. To complement the meat, I've added a fat-cutting spicy salsa of diced jicama, mango, lime, serrano chiles, and cilantro. Serve the carnitas on hot corn or flour tortillas with the salsa for a new twist on the taco-truck standard.

Bison Chili Cheese Dogs Recipe
Bison, not to be confused with buffalo, is leaner and higher in iron content than beef, but is similar in flavor and texture. To make it into chili, fry onions and garlic with spices like cumin and chili powder, deglaze the pan with beer, add the ground bison and some tomatoes, and simmer for about an hour. Use the chili to smother hot dogs (or bison dogs if you want to go all-out bison), and set up a build-it-yourself hot dog bar of cheese, onion, and pepper toppings for your next party.
