The best Christmas mince pie recipe

You can make your own mincemeat, adapting it to include more of the fruit you love. I tend to add a few chopped Medjool dates to shop-bought mincemeat, with a splash of sloe gin. You will need a bun tray and two cutters: one large enough to cut a disc that fits inside each mould, and one for the lid.

Boxing Day lunch: rice with spiced cream

A satisfying way to use up cold cuts of turkey (or other poultry or game). You can prepare this dish in half an hour.

Christmas lunch: braised red cabbage

You can make this up to two days in advance and reheat it in an ovenproof dish with a lid, for 45 minutes at 180C/gas mark 4.

Christmas lunch: sautéed leeks with walnuts and bacon

A quick dish to make just before serving. The powerful flavour of the leeks is balanced by the sweetness of pears; walnuts add Christmassy crunch.
