Think of this Italian version of an omelette as a crustless quiche, suggest the editors and writers of Cooking Light Complete Meals in Minutes, from the low-calorie New York-based magazine (Oxmoor House, $34.95). This collection of more than 700 recipes offers meals that take less than 30 minutes to make. It's possible to ignore the many ready-made products in most recipes and adapt the dish to real home cooking, and also to find recipes that are all-fresh. The book is copiously illustrated, and the low calorie and fat counts are impressive. This egg and vegetable dish contains 173 calories and 6.9 grams of fat per serving.
