It takes only one meal to understand why many contend that Thomas Keller presides over the best restaurant in the United States. Dining here, if you can get a reservation, is a magical experience. The service, setting and, especially, the food, much of which comes from the extensive gardens across the road, are is stupendous. Keller believes that when diners finish a course, they should crave one more bite; he teases and satisfies the palate through nine or more courses. The $250 fixed-price menu includes extras, coffee or tea and the service charge. The elegant century-old stone building started out as a laundry, but you won't feel as if like you've been taken to the cleaners.
Specialties: "Oyster and pearls" (pearl tapioca with oysters and caviar); cornets of salmon tartare; "coffee and doughnuts" (espresso mousse and doughnuts).
