Recipe: Chocolate Brownies

Serves 12-16

INGREDIENTS:
4 ounces unsweetened chocolate (like Baker's brand)
2 sticks unsalted butter
2 cups sugar
4 large eggs
2 tsp vanilla
1 1/2 cup all-purpose flour
1/2 tsp salt
buttered 9 x 13-inch baking dish

PROCEDURE:
Preheat the oven to 350 degrees and use a double boiler to melt 2 sticks of butter and 4 ounces of unsweetened chocolate. (A double boiler is nothing more than a deep pot, with about 1-inch of simmering water in the bottom that a mixing bowl, with the chocolate and butter in it, fits snugly on top of.)

While that's melting, use a large mixing bowl to combine 2 cups of sugar with 4 large eggs and 2 tsp of vanilla and whisk that up.

Keep your eye on the butter and chocolate because you want it to be melted but you don't want it to be super hot so, when you're happy with that, turn the heat off and whisk the butter and chocolate together.

Pour that into the egg mixture a little bit at a time, whisking as you go. It’s not a bad idea to put a folded towel underneath the bowl, so it doesn't spin while you're mixing it and, all that's left is to fold in 1 1/2 cups of flour with 1/2 tsp of salt until it's just combined.

Add that to a well-greased, 9 x 13-inch baking dish and place it on the center rack of the preheated oven. Then use a toothpick test to check it for doneness and it should take about 30 minutes to bake.

HINTS:
Serve with ice cream or fresh fruit or a sprinkling of powdered sugar!
