Thomas Keller's philosophy is that when diners finish a course they should crave one more bite. His restaurant continuously teases and satisfies. Expectant diners jockey for reservations two months out; it's not an easy process, but it's worth the hassle. Under chef Corey Lee, the restaurant continues to set standards. The $240 fixed-price menu includes a service charge, coffee, tea and water. While 10 courses are listed, along with a separate vegetarian menu, the kitchen always sends out a few surprising extras. Located in a century-old stone building, the restaurant features beautifully manicured grounds and some of the best service in the country.
Specialties: Oyster and pearls" (pearl tapioca with oysters and caviar); cornets of salmon tartare; white truffle custard; "coffee and doughnuts" (espresso mousse and doughnuts).
